RECIPE FOR ASIAN SALAD DRESSING

 

Combine together:

2/3 cup rice vinegar, unseasoned

2 tblsp honey or maple syrup

2 tsp sesame oil

2 tblsp soy sauce

2 tsp grated ginger

1 clove garlic

4 tblsp flax oil

 

Shake well before each use.  Store in refrigerator

Very healthy dressing!

RECIPE FOR BAKED ORGANIC CHICKEN

 

Place 1 organic roasting chicken in a roasting pan or glass dish.

 

In small dish mix

3 cloves garlic, pressed

1-2 tblsp minced fresh rosemary

1 tsp olive oil

 

With your hand gently separate the skin from the meat of the chicken breast.  Spread the herb mixture evenly between the skin and the meat.

 

Bake at 450 for ½ hour, turn down to 350 and bake for 1 to 1 hour and 15 minutes or until a meat thermometer placed in the meat reads 180 degrees.

RECIPE FOR BAKING POWDER BISCUITS

 

Put 3 cups of flour in large bowl.  Adjust four as necessary.  Add 2 tsp baking powder, stir.  Then add:

1 ½ cups buttermilk

½ tsp salt

½ tsp soda

1 tblsp shortening

 

Roll out on floured board or wax paper for cut biscuits, or bake as drop biscuits.

Bake at 375 for 25 minutes or 400 for 20 minutes.

Text Box: RECIPE FOR BANANA CUPCAKES

	Thoroughly cream together, ½ cup shortening and 1 ½ cup sugar, add 2 beaten eggs and beat well.
	Sift together, 2 cups flour, ½ tsp salt, 1 tsp baking powder, ¾ tsp baking soda.  
	Add sifted ingredients alternately with ¼ cup sour milk 	
	( 2 tsp vinegar or lemon juice added to milk),  
	1 cup mashed bananas and 1 tsp vanilla.
	Fill greased and floured or lined cupcake tines half full.  Sprinkle with chopped nuts, bake at 375 for 20 minutes. 
	Makes about 2 ½ dozen.

RECIPE FOR BANANA NUT BREAD

 

Sift together in large bowl, 3 ½ cups flour, 4 tsp baking powder, ½ tsp baking soda, 1 tsp salt.  In large mixing bowl, cream together 2/3 cups shortening, and 1 1/3 cup sugar, add 4 eggs and beat until fluffy.  Then on slow speed beat in flour mixture alternating with 2 cups mashed bananas, just until smooth.  Then mix in 1 cup chopped nuts.

 

Bake in greased bread pan at 350 for 1 hour.  Cool for 10 minutes, remove from pan and let cool on rack.

	1 (30 oz.) can refried beans (spicy)
	1 (16 oz.) sour cream	
	1 jar salsa
	Mild cheddar cheese

	Layer beans, sour cream, the salsa in 9X13 pan.  Grate enough cheese to completely cover.  Serve with chips.

RECIPE FOR BEEF AND BEAN ENCHILADAS

 

1 ½ lbs ground beef                                                            1 med sized onion, chopped

1 can (1 lb) refried beans                                                   1 tsp salt

1/8 tsp garlic powder                                                           1/3 cup green taco sauce

1 can olives sliced                                                              1 can enchilada sauce

12 corn tortillas                                                       3 cups shredded cheese

 

In frying pan, brown beef and onions until meat and onions are tender.  Stir in beans, salt, garlic, taco sauce and ½ of the olives.  Bring to slow boil.

Pour ½ of enchilada sauce in 9X13 baking dish.  Place 6 tortillas on plate and microwave for 1 minute.  Place about 1/3 cup of beef on each tortilla and roll.  Place seam side down in baking dish.  Pour remaining sauce evenly over and cover with cheese and remaining olives. 

Bake uncovered at 350 about 15 minutes.  Top with sour cream and salsa if desired.

RECIPE FOR BEEF AND GREEN PEPPERS

 

1 lb of round steak                                                                           2 tbs soy sauce

2 tbs corn starch                                                                              black pepper

Red pepper flakes or cayenne (optional)                                         3 tbs oil

6 sliced green peppers                                                                     1 tsp salt

4 tbs oil                                                                                             1 tbs soy sauce

Rice

 

Drench 1 lb round steak (cut into thin strips) in a mixture of 2 tbs soy sauce, 2 tbs corn starch and a couple dashes of black pepper.  A dash of red pepper flakes or cayenne may be added.

 

Heat 3 tbs oil in skillet and fry 6 sliced green peppers until just tender, add 1 tsp salt.  Remove peppers to plate and set aside.

 

Heat 4 tbs oil in skillet and fry the beef until it changes color, add green peppers and 1 tbs soy sauce.  Fry about 2 minutes, stirring. 

Serve over boiled rice.

RECIPE FOR BEEFY CHEESY POTATO BURRITOS

 

1 to 1 ½ lbs. ground beef

1 small onion chopped (optional)

1 can cream of mushroom soup

1 can cheddar cheese soup

1 can of milk

About 5 or 6 potatoes, boiled

Flour tortillas

 

Brown meat. Add soups, milk and potatoes. Salt and pepper to taste. Bring to boil.  Spoon into warmed tortillas and serve.

RECIPE FOR BREAD 3 LOAVES

 

Dissolve 2 pkgs dry yeast (or 1 ½ tblsp) in warm water.

In very large bowl, mix 1 ¼ cups powdered milk, ½ cup sugar, 2 tblsp salt and 4 cups very warm water.  Add 4 tblsp cooking oil to milk mixture, and then add flour until kneading consistency.  Knead, cover with towel, and let rise in warm place for 1 hour.  Knead down and shape into loaves and put into pans and let rise again for about 1 hour.  Bake at 450 for 10 minutes and then turn oven to 350 and bake another 25 to 30 minutes.

RECIPE FOR BROCCOLI CASSEROLE

2 10 oz pkg frozen chopped broccoli

1 can cream of mushroom soup

1 cup mayonnaise

1 cup shredded cheddar cheese

½ cup minced onion       

1 egg slightly beaten

 

Cook broccoli according to package.  Drain and cool.  Mix soup, mayo, cheddar cheese, onion and egg, add broccoli.  Place mixture in buttered 2 quart baking dish and bake for 40 to 45 minutes at 350.

RECIPE FOR BROCCOLI CHEESE SAUCE

 

Thaw a pkg of frozen broccoli and chop into small pieces.  Chop a medium onion quite fine.  Heat 1 Tblsp cooking oil in a saucepan, toss in chopped veggies and fry about 5 minutes.  Add 1 can of Cream of Chicken soup and heat to boiling point, stirring constantly.  Reduce heat; stir in ½ cup grated cheese or processed cheese spread, ½ cup milk and 1 tsp salt.  Cook about 3 more minutes until bubbly.  Makes about 3 cups.  Serve over boiled rice.

	4 apples
	¼ to ½ cup sugar
	½ cup water
	Nutmeg, cloves or cinnamon

	Wash apples, pare, and core, cut into quarters or smaller.  Place apples in sauce pan, add water. 
	 Cover and cook slowly 15 to 20 minutes or until apples are soft.  Remove from heat and mash with 	fork.  Add sugar and simmer for 1 to 2 minutes.  Add nutmeg, cloves and or cinnamon as desired. 
	 Serve hot or cold
