Recipe For TACO LASAGNE

 

1 lb ground beef                                                                        1 bell pepper

1 chopped onion                                                                        2/3  cup water

1 envelope taco seasoning                                                      1 can refried beans

1 can mex diced tomatoes undrained                                                  3 cups shredded mex cheese blend

Corn tortillas

 

Cook beef, pepper and onion.  Drain, add water, taco seasoning and bring to boil.  Simmer about 10 minutes.  Stir in beans and tomatoes.

Place tortillas in greased 13X9 baking dish.  Spread with ½ beans and meat mixture,  sprinkle with cheese and repeat layers.

Bake at 350 for 30 minutes

Recipe For TACO SALAD

 

Brown 1 lb ground beef in skillet, drain, and add 1 pkg dry onion soup mix and ¾ cup water.  Set aside.

In large bowl, toss together 1 head of lettuce, (shredded). 1 small onion, sliced thin, 1 large tomato, diced.  ¼ cup sliced or diced bell pepper.  1 cup grated cheese and 1 can of olives.

Just before serving add the hamburger mixture and 1 cup taco sauce, and 1 pkg corn chips.

Recipe For TAMALE PIE

 

Brown in skillet, 1 ½ lb ground beef, with chopped onion, drain.  Put small mount of enchilada sauce in bottom of 9X13 baking dish.  Layer 4 corn tortillas, 1/3 of the ground beef, 1/3 can kidney beans, 1/3 cup corn, 1/3 cup sliced or chopped olives, 1/3 cup diced green chilies, 1 cup grated cheese and ¼ of a large can of enchilada sauce.  Repeat twice, so that you have 3 layers of everything.  Top with remaining sauce and 1 cup of cheese.

Bake at 350 for 45 minutes

Recipe For TOFFEE

 

1 cup pecans chopped

¾ cup brown sugar

½ cup butter or margarine

½ cup choc chips

 

Butter a 9X9 in pan.  Spread pecans in pan.  Heat sugar and butter to boiling, stirring constantly.  Boil over medium heat stirring constantly 7 minutes.  Immediately spread mixture evenly over nuts in pan.

Sprinkle choc chips over hot mixture and place baking sheet over pan so contained heat will melt chocolate.  Spread melted choc over candy while hot.  But into squares.  Chill until firm.

Recipe For TOLL HOUSE FAMOUS FUDGE

 

1 ½ cups sugar

2/3 cup (5 oz. can) evaporated milk

2 Tblsp butter or margarine

¼ tsp salt

2 cups miniature marshmallows

1 ½ cups (9 oz.) semi sweet chocolate morsels

½ cup chopped pecans or walnuts (optional)

1 tsp vanilla

 

Line 8-inch square baking pan with foil.

Combine sugar, evaporated milk, butter, and salt in medium saucepan.  Bring to full rolling boil over medium heat, stirring constantly.  Boil, stirring constantly for 4 to 5 minutes.  Remove from heat.  Stir in marshmallows, morsels, nuts and vanilla.  Stir vigorously for 1 minute or until marshmallows are melted.  Pour into prepared baking pan, refrigerate for 2 hours or until firm.  Lift from pan, remove foil.  Cut into pieces.  Makes 49 pieces.

Recipe For TUNA CASSEROLE

 

Cook 1 pkg (8oz) noodles according to pkg directions.  Drain.

 

Combine the noodles and 1 can (6-7oz) good tuna, (can use chicken or turkey) ¼ cup diced green pepper, ¼ cup chopped pimento or red pepper, 1 small onion, chopped, ½ tsp salt, 1 can (11oz) cream of mushroom soup, 1 can (4oz) mushrooms with liquid and ½ cup grated cheese.

 

Pour into greased 1 ½ quart baking dish.  Sprinkle with ½ cup grated cheeseBake at 425 for 20 minutes.

Makes 4 to 6 servings

Recipe For WHITE BREAD             

2 packages active dry yeast                                                                                     ¼ cup sugar

¾ cup warm water (105 to 115 degrees)                                                             1 tblsp salt

2 2/3 cups warm water                                                                                              3 tblsp shortening

9 to 10 cups all purpose flour                                                                                 Soft butter or margarine

 

Dissolve yeast in ¾ cups of warm water.  Stir in 2  2/3 cups warm water, the sugar, salt shortening, and 5 cups of flour.  Beat till smooth.  Mix in enough remaining flour to make dough easy to handle.  Turn dough onto lightly floured board.  Knead until smooth, about 10 minutes.  Place in greased bowl, turn greased side up, cover, let rise in warm place until double the size. (about 1 hour) Punch down dough with fist.  Divide into 3.  roll each half into rectangle, 18X19 inches.  Roll up, beginning at short side.  With side of hand press each end to seal. Fold ends under loaf. Place seamside down in greased load pan.    Brush loaves with butter.  Let rise until double. (about 1 hour)  Heat oven to 425.  Place loaves on low rack so the tops of pans are in center of oven.  Bake 30 to 40 min. or until deep golden brown and loaves sound hollow when tapped.  Remove from pans.  Brush loaves with soft butter, cool on wire rack.
